
Why I Started The Leavened Box: A Better Bread Journey

I didn’t grow up baking sourdough. In fact, I didn’t even eat much bread for a long time—because I felt awful every time I did.
It wasn’t until I started learning more about gut health that I realized how different real sourdough is from the bread most of us are used to. When I was dealing with SIBO and following a low-FODMAP diet, I discovered that slow-fermented sourdough—especially made with organic flour and natural starter—was not only easier to digest but actually made me feel good. It became one of the few things I could eat that felt satisfying and supportive of my health.
Once I started feeling better, I couldn’t keep it to myself.
I began baking for friends, dropping off loaves here and there, hearing things like “This is the first bread I’ve been able to eat in years” or “My kids devoured it in a day.” That lit something in me. I wanted my family and friends who lived out of state to be able to try it too. I wanted to make it easier for anyone—especially people who care about what they’re putting in their body—to get real, small-batch bread without having to track down a farmer’s market or local bakery that only sells on Saturdays.
So I started The Leavened Box.
Every loaf I bake is made with organic ingredients, fermented slowly, and shaped by hand in my kitchen. I don't rush the process. I care about the texture, the flavor, the way it toasts up, and how it makes you feel after you eat it.
I offer several types of sourdough—from the classic to fun flavors like chocolate espresso and everything seasoning. I also developed a gluten-free sourdough made with honey and olive oil that has more of a sandwich-bread consistency. It’s been a favorite with gluten-free customers, especially those who say it reminds them of the bread they used to eat in Europe.
Most of all, I wanted this to be convenient. That’s why I offer shipping, subscriptions, and gift boxes—because good bread shouldn’t be hard to get.
